* 2 batches of cooked sushi rice (3 cups rice, 4 cups water)
* 2 cups Colby and Monterrey Jack Cheese
* 1 8 oz jar of Kim Chi, finely chopped in the food processor
* 1 box of panko bread crumbs
* 2 eggs, beaten to egg wash with 2 tbs of water
Preheat Oven to 375. Spray three baking sheets with non-stick cooking spray. Mix the first three ingredients until they are sticky and will hold a ball shape. Dip each ball in the egg wash, then roll it the panko crumbs. Place on the baking sheet and bake for 15 minutes until the balls are slightly golden.
Serve with the following Aoli
* 8oz of mayonaisse
* 1 small jalapeno, cored and seeds removed, then diced
* 1 oz of pickled ginger
* 2 tbs of ginger
* 1/4 tsp of wasabi powder
Process all ingredients in food processor until well blended.
