Post Thanksgiving Spaetzel Mac and Cheese
8oz cooked long noodle Spaetzel (Aldi Style) or Amish Homestyle Noodles
4 oz Goat Cheese crumbled
4 oz Cabot Vermont Sharp Cheddar shredded
Cream Sauce (4 tbs butter, 2 tbs flour, 1/4 cup whipping cream, 1/4 cup half and half)
1/4 c medium dry white table wine
1 tsp black pepper
1tsb garlic powder
Preheat Oven to 350 F. Grease a medium sized oven casserole dish. On the stove, melt the butter for the Cream Sauce. Add the flour and whisk to combine. Add the whipping cream and about half of the half and half. Keep on warm heat, stirring occasionally.
Layer 1/3 noodles into dish. Top with 1/3 of each cheese, then drizzle over 1/3 of the Cream Sauce. Repeat two more times. One top, sprinkle all the spices. Drizzle with the table wine.
Bake at 350 for approximately 20 minutes or until everything is warm and bubbly.
